Turkey Marinade Recipes For Injecting My Turkey Before Deep Frying It

 

This is the 13th post in our series titled “Twenty Two Thanksgiving Turkey Tips”.  Each day between now and Thanksgiving we’ll have a new tip for you.  Today’s tip are turkey injection recipes:

If you choose to inject your turkey with a marinade, then this is definitely a post you want to pay attention to.  There are many marinades available for purchase, but many delicious marinades can be made right at home.  Marinades are so useful when it comes to turkey because they add flavor, moisture, and can be done the same exact day you plan to cook your turkey.  Whether you want to use a spicy Cajun marinade or a sweet butter-based recipe, the choice is really up to you.  Really the only tool that you need to inject a turkey is a injection kit. With the proper tools, simple ingredients and easy to follow recipes you will have a delicious, flavorful turkey in no time.

 Citrus-Marinated Turkey

  • 10 roasted garlic cloves (see Note)
  • 10 raw garlic cloves
  • 1 3/4 cups plus 3 tablespoons vegetable oil
  • 3/4 cup fresh orange juice
  • 1/4 cup cider vinegar
  • 1/4 cup kosher salt
  • 3 tablespoons fresh lime juice
  • 3 tablespoons dried oregano
  • 3 chipotles in adobo
  • 2 tablespoons annatto paste (see Note)
  • 1 tablespoon ground cumin
  • 1 teaspoon ground allspice

Butter Based Injection Sauce

  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon finely ground pepper
  • salt to taste

Lemon Herb Injection

  • 1/4 cup lemon juice
  • 1/4 cup light cooking oil
  • 1/2 teaspoon black peppercorns, cracked
  • 1/4 cup water
  • 1/2 teaspoon fresh dill
  • 1/2 teaspoon salt

Cajun Turkey Injection

  • 1 cup lemon juice
  • 1/2 cup liquid crab boil
  • 1/2 cup olive oil
  • 1/2 cup butter
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon Tabasco
  • 1 teaspoon cayenne pepper

Should I Brine, Rub Or Inject My Turkey Before Deep Frying It?

This is the 12th post in our series titled “Twenty Two Thanksgiving Turkey Tips”.  Each day between now and Thanksgiving we’ll have a new tip for you.  Today’s tip helps you with whether you should brine, rub or inject your turkey:

When it comes time to flavoring your bird, you have 3 different options: brine, rub or inject.  Whichever method you use is up to you, it is really only a personal preference.  Each and every one of these flavoring techniques gives you turkey a unique flavor different from the others.  Brines and injections make you turkey nice and juicy, while a rub is easy and fast for people looking to not spend a lot of time in preparations.  Below we will break down each of the three flavoring methods so you can choose which one is right for your turkey.

Brining

A brined bird always turns out nice and juicy.  Brine solutions use a lot of salt and surprisingly this actually makes the turkey more juicy and tender.  The salt actually causes the meat tissues to absorb water and flavorings, leaving you with a delicious, juicy bird.  While the turkey is in the brine the flavor absorbs all through the meat which gives the turkey a distinct and unique flavor.  There are many brines recipes to choose from so you can never really go wrong with the taste.

Pros of Brining

  • Gives you the juiciest bird
  • Adds flavor and makes the turkey very tender
  • Acts like a “buffer” to prevent overcooking

 

Dry Rub

A dry rub is a nice and easy way to add some flavor to your bird.  Additionally, there are many recipes to choose from that can match your tastes.  Creole seasonings are extremely popular in the South and they add a lot of zest and flavor to your bird.  While some people may not like that kind of rub (it’s a bit salty) there are plenty of other alternatives.  The key to a good rub is starting it the day before.  One of the first steps is to clear out your refrigerator to leave room to stick your turkey in.  When it comes time to apply your rub, simply just start with the breast and thighs and rub the turkey very gently and softly till the whole bird is covered.

Pros of a Dry Rub:

  • Less messy and quicker than brining
  • Less safety risk when deep frying (no oil meets water effect)
  • Adds more flavor

 

Injection

The third and final way to flavor your turkey is through injection.  To do this you will need an injection kit.  While some fryers come with an injection kit, it is most likely you will have to purchase one.  Then you need to decide which kind of marinade you want.  For this, you can either purchase a marinade or make one yourself.  There are plenty of marinades to choose from, but you cannot use many spices in a marinade for turkey injection since they will get clogged in the needle very easily.   For all you procrastinators out there this method is good because a store bought turkey marinade adds a lot of flavor, while this is probably the only flavoring method that can be done right before you cook you turkey.

Pros of Injection:

  • If you buy a premade marinade you can inject with little or no prep work
  • You can inject the day of cooking your bird
  • Adds more flavor

How Much Oil Do I Need To Deep Fry A Turkey?

 

This is the 11th post in our series titled “Twenty Two Thanksgiving Turkey Tips”.  Each day between now and Thanksgiving we’ll have a new tip for you.  Today’s tip tells you how much oil you need to deep fry a turkey:

So you have your oil picked out, you have your equipment and now it’s time to figure out how much oil to use!  Measuring your oil is an essential part of deep frying a turkey.  If not done properly you’ll too much oil resulting in an overflowing fryer and possible fireball!  If you don’t have enough oil, then not all of the turkey will cooked!

Fortunately we’ve got a simple method for determining the exact amount of oil you will need, and it’s something we call the “reverse water displacement theory.”

This theory helps people to see exactly how much oil will be needed during the turkey frying process.  You start by only using water in a very quick, convenient, and hassle free way to avoid major safety issues from an excess amount of oil.  If you do this every time before you cook your bird you will have a hard time going wrong and avoid any serious messes or hazards.

The Basics of the Water Displacement Theory

  • Grab your cooker or turkey pot for measurement.
  • Put the turkey in the pot and fill it with water.  Do this until the turkey is entirely submerged.
  • Pull the turkey out of the water and let ALL water drip off.
  • Now look to see where the water level is in the pot and mark this level.
  • To mark the water level use a ruler to measure how far up the water is.  Also, if you prefer, you can use a knife or marker to remember the spot.
  • When frying make sure to only fill the oil up till this point

There you have it.  It is really that easy to prevent a fireball or any other disaster from using too much oil while frying.  If you follow these instructions step by step then you should have no problem with oil and won’t become another deep frying disaster.

What Kind Of Oil Do I Need To Deep Fry A Turkey?

 

This is the 10th post in our series titled “Twenty Two Thanksgiving Turkey Tips”.  Each day between now and Thanksgiving we’ll have a new tip for you.  Today’s tip is about what kind of oil is needed to deep fry a turkey:

If you’re deep frying a turkey, then you’re going to need to make sure that you have the right kind of oil.  If a deep fried delicious turkey is your destination, and the equipment that we reviewed in the previous chapter is your car, then the oil that you choose is definitely your fuel.

The great thing is that just like when you buy gas for your car, you have some choices when you buy your cooking oil to deep fry your turkey.

Not only is choosing the right kind of oil important, but so is making sure that you have the correct amount of oil.  There’s nothing worse than planning a huge feast of deep fried turkey on a major holiday, only to realize that you’ve run out of oil, and all of the shops are closed.

Obviously the importance of the oil you choose is key; you’ll also need the correct amount of the right type of oil.  Basically any oil with a high smoking point (over 450º F) will do (because you don’t want your oil to burn or catch fire).  Now let’s review your options when it comes to selecting the type of oil you can use to deep fry your bird:


Peanut Oil

This is typically the best choice.  When it comes to deep-frying turkey peanut oil has the highest smoking point and the greatest amount of flavor.  The higher smoke point allows you to reuse it while also preventing fires.  Since this is the most popular choice among people who deep-fry, you can easily find this type of oil in bulk at many large retail stores.


Corn Oil

This is what is used typically at your local McDonald’s or Burger King.  The oil of the fast food industry, corn oil is a good alternative but probably not the healthiest option.  It is cheaper than peanut oil so if you’re on a tight budget this could potentially be a good option.


Canola Oil

Trans fat free, healthier than any of the other options; canola oil is also a good option.  Just like peanut oil, this type of oil has a high smoke point and is perfect for deep-frying turkeys.


Cottonseed Oil

Another healthy alternative is cottonseed oil.  Again, this oil is trans fat free with a high smoking point.  Highly regarded for its “nutty and buttery” taste this oil is the go to for most people in food production and high end chefs.  This oil is known not to add a flavor of its own, but rather enhance the natural flavor of the bird.


Rice Bran Oil

Expensive but worth it, rice bran oil is a very balanced and diverse oil to use.  Rice bran oil is used for many different uses such as frying, cooking and often used in salad.  Healthy too, rice bran oil has a light viscosity and allows less oil to be absorbed in cooking which lowers the overall calorie content of your meat.

 

Now that you have the right choices for oil under wrap, let’s go over some types of oil to avoid for turkey frying.  Please do not attempt to use the oil categories listed below:

  • Olive Oil (this oil will most likely burn, with a low smoke point of only 360 degrees)
  • Soybean Oil (Very high amount of saturated fat)
  • Grape seed Oil  (Again, high amount of saturated fat as well as hard to find in large quantities)

The Essentials

When looking for the proper equipment it is a good idea to shop for a turkey frying kit. These kits will provide you with the all the essentials you need to prepare your bird. There are a number of turkey frying kits to choose from with a wide range of prices for any budget. Many kits can be purchased for under $100. If you want to get a little fancy though, you can go all out and purchase a nice stain-less steel frying kit that will satisfy all of your needs and probably last for decades.

Safety is one of the biggest concerns that many people, especially first-time fryers, have when it comes to deep frying a turkey.  For every disaster story there are tens of thousands of turkeys that are deep fried safely.  The only reason we ever hear about these “horror stories” is that the deep fryer didn’t pay any attention to safety in the first place.

Either that, or they didn’t have any safety hints to follow.  That’s where this blog post comes into play!  We’ll give you all of the necessary safety tips to deep fry your turkey safely this Thanksgiving.

Listed below are variety of different safety procedures to follow and practice when it comes time to deep frying your turkey.  If you follow these rules, there should be no reason for any accidents to occur and you can then relax and have fun!  With these rules in mind you can deep-fry without worrying about becoming a danger to yourself or your family.

  1. Always deep fry outdoors
  2. Choose your cooking area wisely!  Pick an area that is level with no ceiling, patios or trees in the surrounding area.  Don’t use a deck either to deep-fry you bird because wood and hot grease do not mix well.Deep Fried Turkey Safety
  3. Get good equipment.  A stable fryer that is big enough to hold your big is sufficient.
  4. Dress Appropriately! No flip-flops or open shoes.  Be sure to be covered up enough that grease cannot spill onto your bare skin.

  6. Make sure your bird is completely thawed! An unthawed turkey is a sure why to a huge fireball because oil and water DO NOT mix well at all.
  7. Turn off the burner right before dropping the turkey in.  Relight once your turkey is submerged.
  8. Have a helper for assistance when needed.  Two sets of eyes and hands always helps.
  9. Keep your children and pets away!  A turkey frying area is not the place for children to be playing or pets to be running around.
  10. Keep a Class K fire extinguisher around just in case of a fire.

Have you ever had a dry tasteless turkey that didn’t live up to your expectations?  This is most likely because, like most people, you (over) roasted your turkey.  Roasted turkey can lose a lot of moisture and flavor while cooking, leaving you less satisfied and unimpressed from all your hard work.  Roasting a turkey can take hours to do and if the end result is going to be leathery and dry, why waste the effort?  This is why everyone should consider deep-frying their turkey.  Not only does this make your bird more juicy and delicious, it cuts your cooking time down tremendously.

Listed below are the various reasons why you should try deep-frying and enjoy the juiciest bird you’ve tasted in your life.

  • A deep-fried turkey always comes out tender and delicious.  With roasting the bird is dry is most places and loses flavor
  • It is fun! Instead of crowding around in a stuffy kitchen trying to get a roasted turkey cooked, you can spend time outside with friends and family.
  • This method is a perfect choice for barbeques, tailgates, parties, and holiday feasts.
  • Frying a turkey is MUCH faster.  For instance a 16-18 pound turkey takes only an hour or less to cook.  A roasted turkey of the same size takes 5 ½ to 6 hours.

The disadvantages to roasting:

  • This is the most typical way to cook a turkey. (Think a typical Thanksgiving staple at grandma’s house)
  • As far as time goes, roasting can take anywhere between 3- 6 ½ hours only to cook, not including preparations. ( See why we like deep frying turkeys- its much faster)
  • Roasting means your oven is completely taken up by the turkey with no room for cooking side dishes or anything else.
  • With a roasted turkey you can end up with dry, tasteless meat that is much less flavorful than deep fried turkey.

Your Traditional Turkey Brine

This brine is simple and basic – perfect for beginners

  • 2 cups kosher salt
  • 2 gallon of water

  • 1 tablespoon of ground black pepper
  • A lemon
  • An orange

Sweet Turkey Brine

Here’s an apple spice brine that’s nice and sweet

  • 1 gallon cold water
  • 2 quarts apple juice
  • 2 quarts orange juice
  • 2 cup salt (3 cups Kosher or coarse salt)
  • 1/2 cup brown sugar
  • 10 whole cloves
  • 1 tablespoon ground nutmeg

Zesty Turkey Brine

This citrus kissed turkey brine recipe adds zest with orange, cider and spices.

  • 3 cups Apple Cider
    1/4 cup Fresh Rosemary
    5 cloves Garlic, Minced
    1½ cup Kosher Salt
    2 cups Brown Sugar
    3 Tablespoons Peppercorns
    5 whole Bay Leaves
    Peel Of Three Large Orange, zested
    2 gallons ice water
